Cooking references?

Does anybody happen to know of any good food reference websites? I’m not talking recipes, but a guide that will tell you what sorts of foods that certain cultures eat, how they’re prepared, what sort of flavors or dominant in regions, that sort of thing? I don’t actually want recipes (though I don’t care if they share the same space as the info I want), I just want the whats and whys and not the hows. Make sense?

A comprehensive site like that would be freaking fantastic when I’m trying to write stuff like that, because as it is right now most of my research time for that sort of thing is spent jamming keywords into Google and hoping for the best, rather than actually reading the information I want. Very annoying.

Any suggestions would be greatly appreciated.
